Sweet Potato Cranberry Casserole

One more day until Thanksgiving...and the potato seems to get lost in the shuffle sometimes, so let's celebrate that delightful vegetable with a sparkling addition of you guessed it the cranberry!


Sweet Potato Cranberry Casserole

Ingredients:
4 large sweet potatoes
1/2 cup brown sugar
2 tablespoons butter (optional)
1 cup orange juice
2 cups cranberries
1/4 cup chopped toasted nuts
1/2 cup oats
3 tablespoons brown sugar
2 tablespoons melted butter
1/2 teaspoon cinnamon

Boil yams until tender and then cut into quarter-inch slices.  Layer yams, then 1/2 of other ingredients, then 1/2 yams slices, then remaining cranberries and sugar.  Pour orange juice on last.  

Cover and bake at 350 degrees for 45 minutes.  Then uncover and add topping (nuts, oats, brown sugar, melted butter and cinnamon) and bake 10 minutes more.  

Add grated orange rind for tangy taste; can cut down on sugar and substitute dried cranberries for fresh.

Yield:  8 servings

Cranberry Salad

Just two days remain until we all celebrate the Thanksgiving feast and all things to be thankful for.  Consider serving this lovely salad it's sure to tempt everyone's palate.


Cranberry Salad

Ingredients:

1 package (6 oz.) cherry flavored gelatin
2 cups hot water
1 lb. can whole cranberry sauce
1 lb. can jellied cranberry sauce
1/4 cup lemon juice
8 ounces cream cheese
2 cups whipped cream or whipped topping
1/2 cup chopped walnuts or pecans

Dissolve gelatin in water.  Add cranberry sauces and lemon juice.  Pour int a lightly oiled cake pan.  Chill until firm.  

Blend together softened cream cheese, whipped cream and nuts.  Spread on top of gelatin.  

Refrigerate overnight or for several hours before serving.

Cranberry Cake with Vanilla Sauce

There are only three more days until Thanksgiving and what better way to celebrate then with cake!  One served with a buttery vanilla sauce and of course cranberries are the star of the recipe!


Cranberry Cake with Vanilla Sauce

Ingredients:

Cake:
1 tablespoon plus 1 1/2 teaspoons melted butter
1/2 cup granulated sugar
1/4 cup water
1/4 cup evaporated milk
1 cup flour
1 teaspoon baking soda
1/8 teaspoon salt
1 1/2 cups cranberries, washed, left whole

Vanilla Sauce:
1/2 cup melted butter
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup evaporated milk

In a mixing bowl, blend butter, sugar, water, and evaporated milk.  Into a separate container, sift together flour, soda, and salt.  Add cranberries to flour mixture; toss lightly.  

Mix dry ingredients into the butter and sugar mixture.  Pour batter into a greased 9-inch pie plate.  

Bake at 355 degrees for 25 to 30 minutes.  Serve warm with vanilla sauce.

Heat butter, sugar, vanilla, and evaporated milk to boiling, stirring.  Serve hot over warm cranberry cake.

Cranberry Stuffing

Is stuffing your favorite part of the Thanksgiving feast...try this recipe with the cranberry as an added addition!


Cranberry Stuffing

Prep Time:  25 minutes
Total Time:  25 minutes
Servings:  18

Ingredients:

1 cup butter or margarine
3 medium celery stalks (with leaves), chopped (1 1/2 cups)
3/4 cup finely chopped onion
9 cups soft bread cubes (15 slices)
1/2 cup dried cranberries or golden raisins
2 tablespoons chopped fresh or 1 1/2 teaspoons dried sage leaves
1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
1 1/2 teaspoons salt
1/2 teaspoon pepper

In a 10-inch skillet, melt butter over medium heat.  Cook celery and onion in butter, stirring frequently, until onion is tender.  Stir in about one-third of the bread cubes.  Place in large bowl.  Add remaining bread cubes and ingredients; toss.  Stuff turkey just before roasting.


To bake stuffing separately, place in greased 3-quart casserole or rectangular baking dish, 13x9x2 inches.  Cover and bake at 325 degrees for 30 minutes.   Uncover and bake 15 minutes longer.

Cranberry Sauce

Thanksgiving is one week away...so think about using this recipe for a twist on that classic cranberry sauce!


Cranberry Sauce

Prep Time: 5 minutes
Cook Time: 15 minutes
Yield: 4 servings


Ingredients:

One 12-ounce bag fresh cranberries
1 cup cranberry juice
1 cup pure maple syrup
3 tablespoons orange juice
1 tablespoon grated orange rind

Wash the bag of cranberries under cool water, and then throw them into a medium saucepan.  Pour in the cranberry juice and maple syrup.  Add the orange juice and orange rind (you could also do lemon rind and lemon juice - anything citrusy).  

Stir together and turn the heat on high until it reaches a boil and the berries begin to pop.  

Turn down the heat to medium-low and continue cooking over the low heat until the juice is thick, about 10 minutes.  Turn off the heat.  Allow to cool, and then chill in the fridge until Thanksgiving dinner is ready.  

It should have a nice jelly-like consistency.

Cranberry Cream Pie

What better way to celebrate Thanksgiving then by creating this cranberry delight!


Cranberry Cream Pie

Ingredients:

1 cup whole berry cranberry sauce
1/2 cup brown sugar, firmly packed
1 package (3 ounces) orange Jello
1 cup whipping cream, whipped
1/2 cup finely chopped pecans
1 pastry shell, baked or graham cracker pie crust
Whipped cream for garnish

Combine cranberry sauce and brown sugar in a saucepan over medium heat; bring to a boil.  Remove from heat.  

Add Jello, stirring until dissolved; let cool.  

Fold whipped cream and chopped pecans into cooled cranberry sauce mixture; pour into baked pastry shell or graham cracker shell.  

Chill for several hours, or until set.  Garnish cranberry pie with additional whipped cream.  

Store cranberry cream pie in refrigerator.

Cranberry Thanksgiving Bread

Just in time for Thanksgiving and the cranberry is the star of the show... 


Cranberry Thanksgiving Bread

Prep time: 30 min.
Total time: 1 hr 40 min.
Yield: 1 loaf

Ingredients:

2 cups flour, sifted
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter
1 egg, beaten
1 teaspoon orange rind, grated
3/4 cup orange juice
1 1/2 cups raisins (optional)
2 cups fresh cranberries, coarsely chopped

Sift flour, sugar, baking powder, salt, baking soda together.  

Cut in 1/4 cup butter until mixture is crumbly.  

Add egg, orange peel, and orange juice and mix until mixture is evenly moist. 

Fold in raisins and cranberries.  Spoon into a greased 9 x 5 x 3 loaf pan.  

Bake at 350 degrees for 1 hour and 10 minutes or until toothpick in center comes out clean.  

Cool out of pan on a wire rack.  Keep stored in aluminum foil.

Warrens Cranberry Festival 2014 Pictorial Cancellation Contest

The Warrens Cranberry Festival is currently accepting entries for the Pictorial Cancellation Contest.  Design the official postmark for this year's Festival!

The size of the artwork should be no larger than 3" x 1 1/2".  This prevents the cancellation mark from covering too much area on the article to be cancelled.  Artwork must be camera ready, black ink, slick paper or on plain white bond paper.  Lettering must be typewritten, mechanically produced or professionally hand lettered.  This will ensure the hand stamp manufacturer to produce a quality hand stamp.

Design must include:  Name of the event followed by the word station or sta., Warrens, WI 54666, September 26, 2014 or 26 September 2014 and the theme must pertain to cranberries or the Festival.

Entries are due by July 31, 2014.  The winner will be awarded a $25 cash prize, sponsored by the Warrens Cranberry Festival.

Warrens Cranberry Festival 2014 Scholarship Recipients

Each year the Warrens Cranberry Festival awards academic scholarships to local area students to help them achieve higher educational goals.  The awards were presented to the five individuals earlier this month.

Kelli Pierce - Warrens, WI - was awarded the $500 Warrens Cranberry Festival, Inc., Scholarship and is pursuing a degree at the University of Wisconsin-La Crosse.

Chelsie Popp - Tomah, WI - was awarded the $500 Warrens Cranberry Festival, Inc., Scholarship and is pursuing a degree at Viterbo University.

Emily Reise - Tomah, WI - was awarded the $500 Warrens Cranberry Festival, Inc., Scholarship and is pursuing a degree at the University of Wisconsin-Oshkosh.

Megan Thornsen - Warrens, WI - was awarded the $500 Warrens Cranberry Festival, Inc., Scholarship and is pursuing a degree at the University of Wisconsin-River Falls.

Scott Jay Thorson - Tomah, WI - was awarded the $500 Warrens Cranberry Festival, Inc., Scholarship and is pursuing a degree at Chippewa Valley Technical College.

Warrens Cranberry Accepting Entries for the Recipe and Quilt & Needlework Contests

Warrens Cranberry Festival is currently accepting entries for both the Recipe and Quilt & Needlework Contests.  Click here for a complete set of contest rules for both contests.


2014 Recipe Contest - "Cranberries...Every Day, Every Way, Every Table!"

  • Deadline for entries is May 30, 2014
  • Create a unique and original recipe using cranberries.  (Main dish, salad, soup, snack, dessert, bread, jam, jelly etc.)
    • Two categories of entry:
      • Fresh Cranberry Division (fresh or frozen berries)
      • Processed Cranberry Division (juices, dried cranberries, sauces)
  • This contest is open to all cooks 8 years of age and older, except professional chefs. 
  • You do not need to be a Wisconsin resident to enter.
  • Contestants may submit two recipes in each division, but only one recipe will be selected for the final competition.
  • Twenty finalists will be chosen, ten from each division. 
    • Finalists will be notified by June 16, 2014. 
  • To be eligible for prizes, a finalist must personally bring their finished cranberry product, prepared exactly from the recipe submitted to the Warrens Cranberry Festival on the first day of the Festival for the judging of the Recipe Contest.  Friday, September 26, 2014.
    • Prizes:
      • Six Visa Gift Cards in the amount of $75, $50, and $25 (for first, second and third place winners in each category)
      • Six pieces of cookware (for the first, second and third place winners in each category)
Recipe Contest Sponsors:  Farmers & Merchants Bank of Tomah/Warrens and Kitchen Craft Cookware.


2014 Quilt & Needlework Contest

  • All entries will be displayed and visitors will have the opportunity to vote for their favorites.
  • Warrens Cranberry Festival Queen, Princesses and President will also select their favorites.
  • The Contest will not be critiqued or judged by someone certified in quilting.
  • Seven categories of entry:
    • Class I - Bed Quilts
    • Class II - Crib Quilts
    • Class III - Youth (entrants under the age of 18 years of age)
    • Class IV - Wall Hangings
    • Class V - Unclassified, Quilted or Unquilted (pillows, clothing etc.)
    • Class VI - Needlework
    • Class VII - Cranberry (any item but it MUST pertain to cranberries)
  • All entries MUST pre-register by September 12, 2014
  • Prizes:
    • A People's Choice Ribbon and cash prize will be awarded to the first place winners of each category.
    • A second and third place ribbon will be awarded in each category.
    • A ribbon and gift will be awarded to the winners of the Queen, Princesses and President's favorites.
  • All entries will be displayed during the festival at the Wetherby Stone Building on the corner of Hayes and Main Streets in Warrens.
